Ricardo Lizcano grows his Caturra on volcanic ash soils high above Algeciras, Huila, one of Colombia's most celebrated coffee regions. Caturra is increasingly rare here. Ricardo hand-picks only the ripest cherries, floats them to remove any defects, then submerges them for 30 hours in a controlled anaerobic fermentation. The result is a cup with dark chocolate, apricot, and molasses.
