Pink bourbon, grown in Planadas, Tolima. Jorge Rojas and his team hand-pick at peak ripeness, then float sort to remove low-density beans. A 30-hour underwater fermentation develops the sweetness and acidity this variety is known for, followed by a slow dry on raised beds to 9.5–11% moisture. The final cup highlights notes of raspberry, cherry, brown sugar.
