Jorge Osorio grows his Variedad Colombia on volcanic ash soils above Iquira, one of Huila's highest growing areas. Variedad Colombia was bred by Cenicafé in 1980, the same research body behind Castillo, designed to protect farmers from disease without sacrificing cup quality. Jorge hand-picks and floats only the ripest cherries at El Paraiso, submerges them for 30 hours, then dries for 10 days on parabolic dryers. Experience notes of apricot, lime and caramel.
