Arturo Arango tends his Castillo on volcanic ash soils in Quindio, Colombia. A variety bred to survive, Castillo crosses the disease-resistant Timor Hybrid with Caturra, built to outlast the leaf rust that reshaped Colombian coffee after 2008. Cherries are hand-sorted and floated at Cofinet's La Pradera centre, submerged for 30 hours, then dried on raised beds for 11 days. Enjoy notes of plum, brown sugar and dark chocolate.
